- 1 box Banza Penne
- 3 slices bacon, chopped
- 6 oz Brussel sprouts
- 1 medium shallot
- ½ cup golden raisins
- ¼ cup dry white wine
- Bring pot of salted water to a rolling boil and add penne, stir occasionally. Save ½ cup pasta water before straining.
- As pasta cooks, put chopped bacon in sauce pot on medium-high for 6-7 mins
- Add Brussels sprouts to fat in pot. Cover and cook 6 mins (do not stir). Reduce heat to medium. Add shallot and golden raisins. Cook 2 mins, stirring occasionally.
- Add white wine; cook 2 mins, scraping up browned bits. To sprouts, add bacon, cooked pasta and reserved pasta water and serve.
